I was asked, and agreed, to make cupcakes for my friend Jill's wedding. It took two - almost all nighters - to complete 400 cupcakes but it was fun and well worth the time and effort. I made a cupcake buffet with six different types. They were all VERY yummy but my favorites were the carrot, pineapple coconut and the best chocolate cupcake I have ever made!

That is a crazy amount of cupcakes! They are always sooooo good.
